Blend the following: 2-3 chipotle peppers, 1 cup water, several cloves of garlic, salt, 2-3 tomatoes. Adjust for taste and spiciness.

Place chopped white onions on pan with some oil. Let cook a few minutes. Add salt/pepper seasoned chicken breasts to pan. Cook on medium high for about a minute on each side, then add the previously made sauce to the pan. Cover and set burner to low. Let cook for 10-20 minutes.

Shred chicken with a fork, or cut into small chunks with a knife. Add tortilla chips. Bonus point if you fry some corn tortillas and make your own. Top with a mix of queso fresco and mozarella, cover and let melt. Finish with some cilantro.
